Easy Blueberry Dump Cake & Adults Only Blueberry Lemonade

Blueberry Dump Cake

6 cups blueberries
¼ c. granulated sugar
1 tsp. pure vanilla extract
juice of  ½ a lemon
½ tsp. cinnamon
1 box yellow cake mix
½ c. (1 stick) cold butter, cut into small cubes
Optional:  Whipped Cream or Ice Cream for serving


Preheat oven to 350°. In a medium bowl, combine blueberries, sugar, vanilla, lemon juice, and cinnamon. Pour into a 9”-x-13” baking pan.
Ignore cake mix directions! Pour the dry cake powered  mix on evenly on top of berries and spread into an even layer.
Dot top all over with butter and bake until top is golden and fruit is bubbly, 1 hour.

Adult Only Blueberry Lemonade


2 oz. lemon juice
3 oz. water
2 oz. blueberry simple syrup (recipe below)
1 ½  oz. vodka  (or tequila)


In a shaker filled with ice, combine lemon juice, water, blueberry simple syrup, and vodka. Shake well. Pour cocktail into two glasses filled with ice. Garnish with additional blueberries and a lemon wedge.

Blueberry Simple Syrup

1 cup granulated sugar
1 cup water
1 cup blueberries

Put sugar, water, and blueberries in a medium-size saucepan and bring mixture to a boil. Once boiling, lower heat and let simmer for about 15 minutes, until the mixture thickens.
Strain the mixture into a bowl, being sure to press down on the berries to extract as much juice as possible.
Use a fine mesh strainer or a cheese cloth for different results. Keep syrup in bowl or pour into a mason jar and place in fridge to cool completely before using.
