Cherry Clafoutis



20 oz. fresh pitted cherries *
2 Tbsp. butter, melted
4 eggs
1 cup whole milk, or cream *
3/4 cup flour
½ cup sugar
½ salt
½ tsp. vanilla & almond extract
Powdered sugar for dusting


Preheat the oven to 350 F. Grease deep pie plate with butter.
Dust with powdered sugar.
Arrange the cherries firmly in the pie plate in a single layer; set aside.
Mix eggs with sugar and salt. Stir in flour. Add milk, and extracts. Mix well until well blended and smooth.
Add melted butter, stir to combine well.
Bake about 40-45 minutes until puffed and golden brown. Cool on rack for while it deflates. Sprinkle with powdered sugar just before serving. Serve warm or chilled.
