Skinny Baked Carrot Fries


500 g carrots * (about 2 cups sliced)
1 Tbsp. of any starch/flour: corn, tapioca, rice
1 - 1/4 Tbsp. vegetable or olive oil
1 tsp. finely chopped tarragon or oregano
Salt & Pepper to Taste
Pinch of cayenne or chipotle if spicy is your preference
Parmesan optional

Heat oven to 425. Cut carrots into 'fries, about 1 cm thick fry shaped, (For consistent sizes, cut off thin ends, save for soup or salad) and mix with chosen flour and a little black pepper and a pinch of salt.
Toss with vegetable oil, spread in a single layer on a baking tray lined with parchment, and bake for 40-45 mins, turning halfway, bake for preferred crispness.
Space the carrots evenly. Mix a little salt with tarragon (or any spices) and toss across the cooked fries. Toss Parmesan if using. Dip in favourite creamy sauce, * mayo, * or ketchup.

Mix it up by adding parsnips, beets or any other root veggie!
