Greek Meatballs and Tzatziki

Ingredients
1 pound lean or medium ground beef *
3 tsp. minced garlic
4 Tbsp. finely ground old fashioned oats pulse in processor until almost a powder.
2 Tbsp. finely chopped fresh oregano
2 Tbsp. finely chopped fresh baby dill
1 tsp. each salt and pepper
1/2 medium red onion, grated
1/4 cup finely grated zucchini
2 tsp. extra virgin olive oil
chopped cucumbers * and tomatoes * and shredded zucchini for serving optional. Pita pockets and lettuce, optional

Directions
Preheat oven to 425 degrees. Drizzle a large oven-safe skillet or baking dish with olive oil.
In a large bowl combine garlic, oats, oregano, dill, S&P, mix well. Add ground beef. Mix together just enough for ingredients to blend, “over-squeezing” makes tougher meat balls.
Shape into 1 1/2 inch balls and place in prepared skillet or baking dish.
Bake for 20 minutes or until browned and cooked through the center.

Tzatziki
2 cups plain Greek yogurt *
1 cup finely diced seedless cucumber *
2 Tbsp. fresh lemon juice
2 garlic cloves (or more) minced
2 Tbsp. finely chopped fresh dill
Salt and pepper to taste

In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Taste and season with salt and pepper. If you have time, chill before serving.

Serve alone with tzatziki and vegetables or gyro-style wrapped in a pita with tomatoes, lettuce, and tzatziki sauce.
