Scones with Strawberries & Whipped Cream
2 cups White Flour
1/3 cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
6 tbsp Unsalted Chilled Butter
1 Large Egg
3/4 cup Buttermilk
Place over rack on top third of oven and preheat oven to 400 F. Lightly butter baking sheet.
Mix dry ingredients in large bowl. Cut in chilled butter and toss in flour mix. Mix with fingers until small pea sized. In a separate small bowl beat egg and buttermilk.
Make a well and pour wet ingredients into flour and mix with a fork until moist. Do not over mix. Sprinkle flour on counter and gather dough into a ball and knead. Pat into a flat circle about 3/4 inch thick. With a sharp knife cut into 12 triangles or use a round cookie cutter. Place on sprayed baking sheet, brush top lightly with milk.
Bake 15 minutes until lightly golden. Separate with a spatula. Serve with whipping cream and strawberries.
