Rooting for Root Vegetables (BBQ or Oven)


4 - 6 Carrots, (B.C.), Cut into 4” pieces *
4 - 5 Baby Turnips, Halved
3 - 5 Baby Potatoes, (B.C.), Halved
1 Parsnip, Cut Diagonally
1 Large Beet, Cut into wedges (or 2 small)*
1 Whole Garlic, Separated, unpeeled
Extra Virgin Olive Oil
Salt & Fresh Ground Pepper
Your Favorite Herb & Spice Blend (Optional)


Preheat oven to 400 F, or BBQ.
In a large bowl, mix all ingredients together except beets, toss with hands until all veggies are covered. In a separate bowl add oil to beets. Add seasoning to both.
Spread beets on one end of the pan, the other veggies in the remaining area. (This prevents all veggies from turning red from the beets.)
Put baking dish (preferably not non-stick) in oven or BBQ. Stir occasionally, and roast until tender, about 45 minutes. If a couple are not cooking through, slice each in half.
Transfer to platter to compliments your main course. Top with fresh herbs if desired.
