Tomato and Avocado Salad

*1 avocado chopped
*2 medium vine-ripped tomatoes chopped
1/4 cup diced red onion
*1 chopped onion
1 1/2 tbsp. olive oil
1 tbsp balsamic vinegar
1 tsp lemon juice
1 garlic clove pressed garlic
Salt and pepper
Note: soak onion briefly in water or milk to remove some of the “bite”
Chop tomatoes. Slice avocado around horizontally. Turn, rather than pull the halves apart. Puncture the pit with a knife and carefully turn to remove. Press to invert the avocado out; chop.
Slice onions in strips, soak, rinse, then dice. Chop green onion. Place these 4 ingredients in a large serving bowl.
In a separate bowl, stir together olive oil, vinegar, lemon juice, garlic, salt and pepper. Stir until well blended.
Pour over vegetable mixture and with a large spoon stir gently to mix. Allow to sit briefly before serving. The dressing is required soon after the avocado is cut.
Serve with lightly toasted French toast rubbed with raw garlic and touched with butter or quick broiled sliced cheese.
